This brut nature cava is made from organically grown Macabeo grapes. The vines are cultivated using traditional methods, growing as free-standing bushes in the calcareous clay soils of Requena. We harvest by hand at dawn, carefully selecting only the finest grapes.

In the cellar, we handle the grapes gently, avoiding destemming or pressing. Only the mosto flor — the finest part of the must — is fermented and left on the lees for several months to develop its character and structure. After twelve months in the bottle, the result is a cava with fine, persistent bubbles, aromas of ripe fruit and just a hint of dried fruit.
